Cape Cod Culinary Institute opens commercial kitchen at KAM appliances

BARNSTABLE — The Cape Cod Culinary Incubator, a member-based nonprofit, opened its shared-use commercial kitchen at KAM Appliances on Thursday.

The Incubator, founded by Lee Hill in 2013, was originally called the Commercial Kitchen Cooperative of Cape Cod. Incubator members produce baked goods, ice cream and cater events.

In 2019, the organization changed its name and began working with KAM Appliances to develop a kitchen space, President Linda Davey said.

"KAM hosted classes when we were looking for space," she said, "and it seemed like good fit."

The 1,500-square-foot kitchen, which is available for members to rent, is packed with features and equipment.

It includes double-stacked convection ovens, proofing and baking ovens, a steam oven, a six-burner gas range, a 30-gallon steam kettle, a tilt skillet and braiser, a griddle, fryolators and a walk-in cooler and freezer.

KAM Appliances, which was founded in 1977, operates stores in Hanover, Nantucket and Hyannis.

The Incubator is at KAM Appliance's new building, 6 Aggregate Way, Hyannis. Scheduled tours and member orientations are scheduled to begin May 12.  

Members must complete an application, obtain proper permits and insurance, and submit required documentation to the incubator. The group provides support and resources to those interested in culinary entrepreneurship, Davey said.

"We will help with ideas and the processes they need to get products out," she said.
