This is a snapshot of the inspections conducted by the Marion County health department.
Twice annually, licensed restaurants receive unannounced inspections that focus on food temperatures, food preparation practices, worker hygiene, dish-washing and sanitizing, and equipment and facility cleanliness.
Violations: Restaurant scores are based on a 100-point scale. Priority violations deduct five points, and priority foundation violations deduct three points. Violations recorded on consecutive inspections result in point deductions being doubled.
Scoring: Scores of 70 or higher are considered compliant. Restaurants scoring below 70 must be re-inspected within 30 days or face closure or other administrative action. Restaurants display a placard by the entrance to indicate whether they have passed their last inspection.

Food-contact surfaces are not clean, specifically: The oven above the range has accrued greasy drips that are ready to fall down onto the range. The meat slicer is dirty with dried meat buildup. Point deduction: 3.
Refrigerated, ready-to-eat, potentially hazardous food has not been consumed within the required time period or is not properly datemarked, specifically: The following items, stored in the chef's prep cooler or the upright randell refrigerator, are listed with their datemarks, are in violaton: hot dogs (7/29), grilled chicken (8/1), ham (8/1), corned beef (7/11, may have been in freezer for some time), roast beef (7/29), potato salad (no date), rice (8/1), salsa (7/21). Point deduction: 5.

A handwashing sink does not provide the minimum water temperature or is not equipped with a mixing valve or combination faucet, specifically: Hot water turned off at the hand washing sinks near the back ice machine and near the meat walk-in refrigerator. Hot water at the front beverage handwashing sink was a slow trickle that reduces in time, causing less water to flow through. Maximum water temperature measured 73F at this sink. Point deduction: 3.
The use of time as a public health control is not properly monitored, food is not properly marked or written procedures have not been developed, specifically: Time mark stamp missing on tray of takoyaki at the sushi station; heat lamp and hot plate underneath could not maintain temperature above 100F. Point deduction: 3.
Working containers of poisonous or toxic materials are not clearly labeled, specifically: Several spray bottles of glass cleaner are not labeled under the beverage station cabinet. Point deduction: 3.
